Pistachio Arugula Salad
Ingredients
- 8 oz Baby arugula
- ½ Cup Pistachios
- ½ Avocado
- 1 tsp Honey
- 2 tbsp Lemon juice, freshly squeezed
- 6 tbsp Olive oil, extra-virgin
- 3 oz Shaved parmesan cheese
- Black pepper and sea salt (optional)
This salad is light and refreshing and goes well with everything!
Preparation Instructions
- Cut the avocado in chunks
- Rinse and dry the arugula
- Place the baby arugula, pistachios, and avocado chunks into a large bowl
- Mix the salad dressing ingredients (olive oil, honey and lemon juice)
- Pour half of the dressing over the salad and gently toss
- Shave the parmesan cheese into thin slices and add them to the salad
- Season with sea salt and black pepper to taste
- Toss the salad again and serve immediately with dressing on the side
