Pistachio Arugula Salad

Ingredients

  • 8 oz Baby arugula
  • ½ Cup Pistachios
  • ½ Avocado
  • 1 tsp Honey
  • 2 tbsp Lemon juice, freshly squeezed
  • 6 tbsp Olive oil, extra-virgin
  • 3 oz Shaved parmesan cheese
  • Black pepper and sea salt (optional)

This salad is light and refreshing and goes well with everything!

Preparation Instructions

  1. Cut the avocado in chunks
  2. Rinse and dry the arugula
  3. Place the baby arugula, pistachios, and avocado chunks into a large bowl
  4. Mix the salad dressing ingredients (olive oil, honey and lemon juice)
  5. Pour half of the dressing over the salad and gently toss
  6. Shave the parmesan cheese into thin slices and add them to the salad
  7. Season with sea salt and black pepper to taste
  8. Toss the salad again and serve immediately with dressing on the side
