Pistachio Pesto
Ingredients
- Kosher salt and freshly ground black pepper
- 1 pound fettuccine
- 1 cup roasted shelled pistachios
- 3/4 cup fresh basil leaves, plus more for garnish
- 1/2 cup extra-virgin olive oil
- 1/4 cup grated Parmesan
- 3 cloves garlic
- 1 lemon

Preparation Instructions
- Roughly chop the garlic
- Zest and juice the lemon
- Grate the parmesan
- Place the the pistachios, basil, olive oil, parmesan, garlic, lemon zest and juice and some salt and pepper in a food processor or in a manual grinder
- Process or grind until well combined
- Serve with pasta of choice or on a toast for a bruschetta
